1 whole chicken
1 large lemon
1 cup of clarified (ghee) butter
4 garlic cloves
6 twigs of thyme
Salt and pepper to taste
Preheat oven to 350 degrees. Wash chicken gently with warm water and remove all the insides if need be. Most stores sell whole chickens with giblets already removed. Stuff the inside of the chicken with thyme, rosemary, 4 garlic cloves, and the large lemon cut in half. Sprinkle salt generously inside. For the outside, coat the chicken with ghee generously for a nice golden crisp. Sprinkle salt and pepper generously and rosemary, thyme, and oregano (optional). You can also add some more lemon - squeeze juice and pour a bit over the chicken. Place chicken in the oven and cook for 45 minutes or until chicken is done.
